Cinnamon Chip Pumpkin Muffins

I love pumpkin bread.

But I have found that most pumpkin breads out there don't actually taste like pumpkin.  They taste like pumpkin spice, which is not the same thing, it's good in its own right, but if I am going to eat pumpkin bread, I want it to taste like pumpkin...is that so wrong?

I didn't think so.

These muffins actually taste like pumpkin, which is awesome!  And they are dotted with spicy little cinnamon chips, which are amazing!  If you prefer to use chocolate chips instead of cinnamon ones, be my guest!



Cinnamon Chip Pumpkin Muffins

Ingredients:

1 3/4 c. flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1 1/4 c. sugar
1/4 c. brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp cloves
1/2 c. applesauce
2 eggs
1 c. pumpkin
1/4 c. water
1 c. cinnamon chips

Directions:

Preheat oven to 350.

Sift together flour, baking soda, salt, baking powder, and spices in a medium bowl.

In a separate bowl, stir together pumpkin, applesauce, sugars, eggs, and water until smooth.  Slowly add the dry ingredients to the pumpkin mixture and stir until completely incorporated. Stir in chips.

Pour batter into a greased or lined muffin tin 3/4 of the way full.

Bake 20-22 minutes.
