Cinnamon Belgian Waffles

I love waffles.

Waffles are my favorite traditional breakfast food, more than pancakes, more than French toast.  Don't get me wrong, pancakes and French toast are great, but waffles are pure heaven!

And these Cinnamon Belgian Waffles scream warmth and comfort.  Comfort drenched in Pumpkin Spice Syrup!



Cinnamon Belgian Waffles

Ingredients:

2 eggs (separated)
1 tsp vanilla
1 c. buttermilk
1/4 c. melted butter
1 c. flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 Tbs sugar
1/2 tsp cinnamon

Directions:

In a medium bowl, whisk together egg yolks, buttermilk, vanilla, and melted butter.

Sift together flour, baking powder, baking soda, sugar, and cinnamon and add to the wet ingredients.  Mix thoroughly.

Whip egg whites until stiff and fold into the batter.

Cook on a hot waffle iron.

Serve with your favorite syrup.
